15 MINUTE VEGETABLE SAUTAY

INGREDIENTS

  • bok choy
  • 2 peppers of your choice (green, yellow, red, orange)
  • half a red onion
  • 2 celeri sticks
  • 2 carrots
  • soy sauce
  • 3 tbsp of oil (olive or coconut are the best)

STEPS

  1. chop all your vegetables
  2. heat your pan at medium heat and add the oil
  3. Add all your vegetables , soy sauce and pepper
  4. cook for about 10 minutes until the  vegetables have soften

BLACK BEAN & TRUFFLE HOT SPINACH SALAD

I don’t know for you, but sometimes my tummy just doesn’t feel like having a cold boring salad.

I opened my fridge and found a bunch of leftovers from the easter brunch. So I used my creativity!

Ingredients:

  • spinach
  • potatoes
  • asparagus
  • cherry tomatoes
  • feta (goat cheese would be even more awesome)
  • green beans
  • shallot
  • balsamic vinegar glaze (check out my recipe)
  • olive oil
  • cilantro
  • pepper
  • truffle salt

Heat your pan at medium and drizzle your olive oil. First, cut your shallot finely and put it it the pan.When you shallot is golden, throw in all the ingredients except for the cheese, spinach and the balsamic glaze.

Cook for about 15 minutes.

In a bowl, mix your spinach with olive oil. (using your hands will make it easier)

Lastly, add you spinach and feta cheese and mix everything up.

Serve hot in a plate with drizzled balsamic glaze. (or just balsamic vinegar mixed with honey)

10 MINUTES APPLE & BERRY CRUMBLE

10 minutes? yeah. That’s quick.

Ingredients:

  • 2-3 apples (peeled)
  • Berries (optional, but it tastes even better)
  • Oats or granola
  • cinnamon
  • brown sugar or honey or maple syrup (or no sugar at all, as you like it)

First of all, cut your apple and add the berries (if you intended to add berries to your crumble). After, add your cinnamon and sugar.

Then, cook in the microwave for 3 minutes.

In another bowl, mix your oats or granola with sugar and a little bit of butter or coconut oil.

Sprinkle on top of your fruit and put in the microwave for 1 minute.

GINGERBREAD STYLE GRANOLA

Who doesn’t like waking up at the smell of sweet toasting granola?

well I surely do!

Here is  comforting recipe to start your day! (Or for snackers like me out there, it’s a great idea too)

Ingredients:

  • All bran cereal
  • rolled oats
  • brown sugar
  • honey
  • pumpkin seeds
  • cinnamon
  • ginger
  • raisins
  • nutmeg

Bake in the oven at 350 for about 15-20 minutes until the oats are golden.

Pair this wonderful recipe with yogurt and fruit-your tastebuds will love you!

 

 

 

THE BEST MACARONI SALAD

I have to mention that I am THE MACARONI SALAD GOD. This recipe is so freakin’ delicious. Forget the store bought kinds, it doesn’t even taste a little like them. (If we can call them macaroni salad)

Ingredients:

  • macaroni (duh)
  • cherry tomatoes or red peppers
  • cilantro or parsley (or both, it’s even better)
  • Red onions
  • Chopped salty pickles
  • salt and pepper
  • mayonnaise (for a healthier version, throw in some greek yogurt too)
  • Dijon mustard
  • sriracha

So just cook your macaroni and throw in all of those ingredients with the macaroni.(it will turn out great anyways)

FUN WITH SALAD

Eating salad can be boring sometimes. The truth is that there are soooo many combinations that you can try!

First of all, I have to mention that grocery store dressing’s (in my opinion) all taste similar and they are expensive. HOMEMADE DRESSINGS ARE A HUNDRED TIMES BETTER!

My personal recipe for the dressing is:

  • Olive oil
  • balsamic vinegar (or any type of vinegar is fine)
  • dijon mustard
  • honey or maple syrup
  • salt
  • pepper

TRY IT YOU WILL FALL IN LOVE (In case you don’t have a date for valentine’s day)

Now for the salad (the important part).You will need:

  • Any type of salad (spinach, kale, lettuce, aragula, boston..)
  • Veggies or fruit(tomato, cucumber, peppers, celery, avocado, brocoli, mushroom, cabbage, beets, squash, apple, clementines,)
  • Protein (egg, chicken, beans, turkey, beef, nuts, tofu, cheese)
  • Other fancy foods (cilantro, basil, chia seeds, olives, dried tomatoes, croutons, grains)

And for the final, add some tasty homemade dressing!
