MEXICAN SPINACH SALSA

INGREDIENTS

  • spinach
  • corn
  • 1 red pepper
  • 1 onion (any type of onion works perfectly)
  • 1 cup of baby tomatoes
  • cilantro
  • salt
  • pepper

Vinaigrette

  • 1 tbsp Olive oil
  • a half tbsp of white wine vinegar
  • 2 tsp of honey
  • salt
  • pepper
  • 1 tsp. of sriracha

STEPS

  1. Mix the vinaigrette ingredients together
  2. Cut all your vegetables in small pieces
  3. Mix everything up!

15 MINUTE VEGETABLE SAUTAY

INGREDIENTS

  • bok choy
  • 2 peppers of your choice (green, yellow, red, orange)
  • half a red onion
  • 2 celeri sticks
  • 2 carrots
  • soy sauce
  • 3 tbsp of oil (olive or coconut are the best)

STEPS

  1. chop all your vegetables
  2. heat your pan at medium heat and add the oil
  3. Add all your vegetables , soy sauce and pepper
  4. cook for about 10 minutes until the  vegetables have soften

APPLE CHEDDAR BACON CHOWDER

mmm just the sound of this recipe reminds me of a cold autumn day. The sweet and salty flavors of this soup is exactly what you need.

INGREDIENTS

  • 3 cups of chicken broth
  • 1 cup of milk
  • 3 cups of shredded cheddar cheese
  • 3 chopped apples
  • 5 slices of bacon
  • 1 onion
  • salt
  • pepper

PREPARATION

  1. At medium heat, cook the bacon with the onions in a big pot. When the onions start getting golden, it’s ready.
  2. Add all the other ingredients.
  3. Cook for a minimum of 30 minutes. (The more you cook it, the more delicious it gets)

Now that’s easy! Who said cooking was difficult?

CHICKEN QUESADILLAS WITH CHUNKY SALSA

INGREDIENTS

Quesadillas

  • Pita bread or naan bread (basically a flatbread)
  • Shredded Cheese (mozzarella or cheddar works perfectly)
  • Cooked chicken pieces
  • Butter

Salsa

  • Diced tomatoes
  • Basil
  • Salt
  • Pepper
  • Half a lemon
  • Pepper flakes
  • Olive oil

INSTRUCTIONS

Quesadillas

1.Start your oven at 375 degrees

2.Place some aluminum foil on a pan

3.Cover your bread with a little butter

4.Sprinkle the shredded cheese on the bread

5.Add the chicken cover with an other bread

6.Cook for about 10-15 minutes until the cheese is melted.

Salsa

  1. Put the diced tomatoes in a small bowl

2.Add the roughly sliced basil in the bowl

3.Drizzle some olive oil

4.Add the salt, pepper, pepper flakes to your taste

5.Squeeze the lemon juice into the bowl and mix

PEANUT BUTTER BANANA & NUT OATMEAL

I love oatmeal in the morning, it’s probably what encourages me to get up every day!

Read below to for the best oatmeal recipe you’ve ever eaten.

Ingredients:

  • ½ cup oatmeal(steel cut)
  • ½ cup water
  • ½ cup vanilla soy milk (or almond milk)
  • 2 tbsp. peanut butter
  • dried raisins
  • pumpkin seeds
  • 1 banana
  • cinnamon

1- In a pan at high heat, pour the liquids, cinnamon and the oatmeal.

2- Stir constantly, it should take a maximum of 5 minutes. Add more liquids if it’s too thick.

3- When the oatmeal is fully cooked, add the dried raisins and stir.

4- Pour in a bowl and top with the banana, nuts and peanut butter!

STRAWBERRY BASIL TRIFLE DELIGHT

Ingredients:

  • Angel food cake (store bought is easier)
  • strawberries (diced)
  • frozen strawberries
  • granulated sugar (or any kind of sugar)
  • heavy cream
  • vanilla pudding
  • confectioner’s sugar
  • vanilla extract
  • Basil

Step 1: In a pot, put the frozen strawberries, basil and the sugar and cook at medium until the strawberries are melted.

Step 2: In an electric mixer, whip the heavy cream with the vanilla extract. Add the confectioner’s sugar when the the heavy cream is fully whipped.

Step 3: Cut you angel  food cake in pieces.

Step 4: Make layers with the whipped cream, strawberries, strawberry jam and the angel food cake.

FUNKY SMOKED SALMON ROLLS

Smoked salmon as an appetizer is good.

But what if this wonderful salty goodness was rolled up with cream cheese, capers and fresh chives?

I heard you, it would be delicious and awesome.

Ingredients:

  • smoked salmon
  • cream cheese
  • chives
  • capers

It’s really simple, just spread the cream cheese on a smoked salmon piece and put your chives and capers on top.

Then, roll it up!

It’s that simple, and it’s ought to impress!

GINGERBREAD STYLE GRANOLA

Who doesn’t like waking up at the smell of sweet toasting granola?

well I surely do!

Here is  comforting recipe to start your day! (Or for snackers like me out there, it’s a great idea too)

Ingredients:

  • All bran cereal
  • rolled oats
  • brown sugar
  • honey
  • pumpkin seeds
  • cinnamon
  • ginger
  • raisins
  • nutmeg

Bake in the oven at 350 for about 15-20 minutes until the oats are golden.

Pair this wonderful recipe with yogurt and fruit-your tastebuds will love you!

 

 

 

GARLIC & SHRIMP PASTA

Oh yeahhhh pasta!

Read closely & prepare your stove.

Ingredients:

  • whole wheat pasta
  • olive oil
  • spinach
  • onions
  • cilantro
  • chives
  • shrimp
  • salt
  • garlic
  • pepper
  • cumin

First of all, cook your pasta.

After, (at medium heat) put the onions, chives, garlic and cilantro in a big pan and drizzle with olive oil. Cook everything until the onions are golden .Throw your shrimp in the party until they are fully cooked. When your pasta in ready, add it in there too with the spinach and sprinkle your salt, pepper and cumin. Add some olive oil for more flavor!

It has plenty of benefits such as:
