BLACK BEAN & TRUFFLE HOT SPINACH SALAD

I don’t know for you, but sometimes my tummy just doesn’t feel like having a cold boring salad.

I opened my fridge and found a bunch of leftovers from the easter brunch. So I used my creativity!

Ingredients:

  • spinach
  • potatoes
  • asparagus
  • cherry tomatoes
  • feta (goat cheese would be even more awesome)
  • green beans
  • shallot
  • balsamic vinegar glaze (check out my recipe)
  • olive oil
  • cilantro
  • pepper
  • truffle salt

Heat your pan at medium and drizzle your olive oil. First, cut your shallot finely and put it it the pan. When you shallot is golden, throw in all the ingredients except for the cheese, spinach and the balsamic glaze.

Cook for about 15 minutes.

In a bowl, mix your spinach with olive oil. (using your hands will make it easier)

Lastly, add you spinach and feta cheese and mix everything up.

Serve hot in a plate with drizzled balsamic glaze. (or just balsamic vinegar mixed with honey)

SHRIMP & CASHEW PAD THAÏ

This recipe is incredibly easy and it’s DELICIOUS.

The fun part is: you can modify it as much as you like and it’s going to turn into a masterpiece. (Unless you add random things like nutella, try it with it’s friend peanut butter instead, i’m sure it’s good)

Ingredients:

  • Noodles
  • Bok choy
  • peas
  • cashews
  • shrimp
  • Onions
  • chives
  • cilantro
  • lime juice
  • soy sauce
  • Random spices (throw in what seems tasty)
  • olive oil
  • garlic

First of all, cook your noodles. After, in a wok or a normal pan, cook your onions with olive oil at medium until they are golden. Then, add everything else in your pan and let it cook for a while.

If your shrimp isn’t precooked, cook it in a seperate pan. If they are pre-cooked, let them join the party in the pan immediately.

When everything is cooked and seasoned at your own taste, put your pasta in the pan and add your soy sauce, lime juice and spices.

KEY LIME SQUARES

So yesterday we had friends over, we opted for a cuban theme.  (Why?One word: Mojito.)

And because lime was a big part of the menu, I made these delicious key lime squares. I have to mention that I accidentally dropped a plate on the dessert. It was good anyways, But yeah you can laugh.

CRUST

2 cups of graham crackers (crumbles)

3 Tablespoons salted butter, melted

1/3 cups of sugar

FILLING

3 large egg yolks

14-ounce can of sweetened condensed milk

1/2 cup key lime juice

2 teaspoons lime zest

food coloring (green, duh)

Turn the oven on at 350, put some aluminium foil in a pan. Throw the crumble in the pan and tap it with a spoon (or your hands) until it looks like a descent crust. Place in the oven for 10 minutes. For the mixture: I strongly suggest a electric mixer. (If not, good luck and I hope you have some muscles)So, Beat the egg yolks and then throw the rest of the ingredients in and mix on high until it’s thick. Pour the mixture on the crust and put the dessert back in the oven for 15 minutes. The mixture will harden afterwards. Put in the fridge for 2 hours. (or less, if you are really impatient and hungry, I get ya)
