HEALTHY BUCKWHEAT BANANA RAISIN MUFFINS

These muffins are perfect for breakfast, as a snack or desert!

I added some honey on top with some yogurt for breakfast, it was delicious!

Here we go!

Ingredients:

2 ½ cups buckwheat flour
½ cup  flour
½ cup honey or maple syrup (any type of sugar)
2 tsp. baking powder
1 tsp. baking soda
½ tsp. sea salt
3 tsp. cinnamon
1 tsp ginger powder
2 cups applesauce
¼ cup melted virgin coconut oil, canola oil or butter
2 tsp. vanilla
2 Bananas
½ cup raisins

Preheat your oven to 375 degrees F.

In a large bowl combine the buckwheat flour,  flour, sugar, baking soda, baking powder, sea salt, and spices. Then mix mix mix.

Mix all the wet ingredients together in a seperate bowl.

Combine everything together and mix well.

With a spoon, put your batter in muffins tins and bake for about 25 minutes.

MANGO & TRUFFLE SALMON TARTAR

Another tartar? YES!

Ingredients:

  • Fresh salmon
  • Greek yogurt (about 2 tbs)
  • Truffle oil
  • Olive oil
  • Cilantro
  • Basil
  • Mango (small pieces)
  • Mint
  • Chives
  • Salt
  • Panko crumbs
  • Black sesame seeds

First step: Cut your salmon in small pieces. After, cut everything else and just throw in a bowl. Add your greek yogurt, oil, at your own taste, until the texture is tartary-like. Then, simply mix everything together.

GINGERBREAD STYLE GRANOLA

Who doesn’t like waking up at the smell of sweet toasting granola?

well I surely do!

Here is  comforting recipe to start your day! (Or for snackers like me out there, it’s a great idea too)

Ingredients:

  • All bran cereal
  • rolled oats
  • brown sugar
  • honey
  • pumpkin seeds
  • cinnamon
  • ginger
  • raisins
  • nutmeg

Bake in the oven at 350 for about 15-20 minutes until the oats are golden.

Pair this wonderful recipe with yogurt and fruit-your tastebuds will love you!

 

 

 

SHRIMP & CASHEW PAD THAÏ

This recipe is incredibly easy and it’s DELICIOUS.

The fun part is: you can modify it as much as you like and it’s going to turn into a masterpiece. (Unless you add random things like nutella, try it with it’s friend peanut butter instead, i’m sure it’s good)

Ingredients:

  • Noodles
  • Bok choy
  • peas
  • cashews
  • shrimp
  • Onions
  • chives
  • cilantro
  • lime juice
  • soy sauce
  • Random spices (throw in what seems tasty)
  • olive oil
  • garlic

First of all, cook your noodles. After, in a wok or a normal pan, cook your onions with olive oil at medium until they are golden. Then, add everything else in your pan and let it cook for a while.

If your shrimp isn’t precooked, cook it in a seperate pan. If they are pre-cooked, let them join the party in the pan immediately.

When everything is cooked and seasoned at your own taste, put your pasta in the pan and add your soy sauce, lime juice and spices.

GARLIC & SHRIMP PASTA

Oh yeahhhh pasta!

Read closely & prepare your stove.

Ingredients:

  • whole wheat pasta
  • olive oil
  • spinach
  • onions
  • cilantro
  • chives
  • shrimp
  • salt
  • garlic
  • pepper
  • cumin

First of all, cook your pasta.

After, (at medium heat) put the onions, chives, garlic and cilantro in a big pan and drizzle with olive oil. Cook everything until the onions are golden .Throw your shrimp in the party until they are fully cooked. When your pasta in ready, add it in there too with the spinach and sprinkle your salt, pepper and cumin. Add some olive oil for more flavor!

THE BEST MACARONI SALAD

I have to mention that I am THE MACARONI SALAD GOD. This recipe is so freakin’ delicious. Forget the store bought kinds, it doesn’t even taste a little like them. (If we can call them macaroni salad)

Ingredients:

  • macaroni (duh)
  • cherry tomatoes or red peppers
  • cilantro or parsley (or both, it’s even better)
  • Red onions
  • Chopped salty pickles
  • salt and pepper
  • mayonnaise (for a healthier version, throw in some greek yogurt too)
  • Dijon mustard
  • sriracha

So just cook your macaroni and throw in all of those ingredients with the macaroni.(it will turn out great anyways)

TOMATO & BASIL CHICKEN

Yum! I have to say that combining these three foods makes a really balanced meal. (protein, grains and vegetables)

Ingredients:

  • sun-dried tomato pesto chicken
  • brown rice
  • bok choy
  • zucchini
  • purple cabbage
  • onions
  • cilantro
  • mozzarella cheese
  • olive oil
  • salt
  • pepper
  • random spices (chilli, basil, italian herbs, garlic..)

…I’m writing this and I’m still hungry. But I just ate. Damn it.

I drizzled the olive oil on the vegetables and sprinkled some spices on top. Then, I cooked the vegetables in the oven at 350 for about 30-40 minutes.

I cooked the brown rice in a rice cooker.(Great investment by the way, I was always burning my rice.)

For the chicken, I cooked it in a pan with some olive oil and I added the pesto when it was fully cooked. I threw some spices in and ta-da!

FUN WITH SALAD

Eating salad can be boring sometimes. The truth is that there are soooo many combinations that you can try!

First of all, I have to mention that grocery store dressing’s (in my opinion) all taste similar and they are expensive. HOMEMADE DRESSINGS ARE A HUNDRED TIMES BETTER!

My personal recipe for the dressing is:

  • Olive oil
  • balsamic vinegar (or any type of vinegar is fine)
  • dijon mustard
  • honey or maple syrup
  • salt
  • pepper

TRY IT YOU WILL FALL IN LOVE (In case you don’t have a date for valentine’s day)

Now for the salad (the important part).You will need:

  • Any type of salad (spinach, kale, lettuce, aragula, boston..)
  • Veggies or fruit(tomato, cucumber, peppers, celery, avocado, brocoli, mushroom, cabbage, beets, squash, apple, clementines,)
  • Protein (egg, chicken, beans, turkey, beef, nuts, tofu, cheese)
  • Other fancy foods (cilantro, basil, chia seeds, olives, dried tomatoes, croutons, grains)

And for the final, add some tasty homemade dressing!

SALMON TARTAR

I said it indeed. Salmon tartar.

And i’ll say it again. Salmon tartar.

I couldn’t even describe how delicious it was. It’s a hundred times better than a restaurant bought tartar.

ingredients:

  • Fresh salmon
  • chives
  • smoked salmon
  • capers
  • caviar (fancy isn’t it?)
  • spices(such as: salt, pepper, thym, garlic, basil)

Make some homemade croutons and you are good to go!

You can really customize it at your own taste. By the way, valentines day is coming, I’m talking to guys out there: It’s a majooooor plus if a guy knows how to cook.
